 When we are talking about the most famous and most searched Indian delicacy which Dal Makhni. Maa ki dal and Dal Makhani is it the same or both are different dishes?? Let's explore the Dal Makhani with their most important characteristics.


The original recipe originated from the Western part of Punjab, which is now a part of Pakistan. It was the Peshawaris who made the dal and the Punjabis who made it famous by serving it with roti in Peshawar dhabas. So, when the Peshawaris crossed the border, they brought the recipe with them. After the partition, when many Punjabis migrated to the northern parts of India, they introduced the dish. Today, it is a quintessentially Indian dish that is must on every menu and is cooked in every home of India with slight variations. The rich vegetarian dish is served as the main meal and is an essential part of any buffet and served on special occasions.

Ingredients

·          1 cup whole black lentils(urad daal)

·          1tbsp Red kidney beans (Rajma)

·          1nos. onion

·          2-3nos  tomato

·          15 gm chopped Ginger piece

·          2-3 green chilies finely chopped

·          2 tbsp Garlic paste

·          1/2 cup fresh cream

·          3 tbsp Butter

·          1tsp cumin seeds (jeera)

·          1/2tsp turmeric powder

·          1/2tsp Garam masala

·          2tsp.Red chili powder

·          1/2tsp Coriander powder

·          Salt to taste

Method

Soak rajma in water overnight.

·       Add water & little salt and pressure-cook Rajma and urad daaltill soft for about 20-25 minutes. Mash and boil again for 15-20minutes and add curd and cream to the daal.

·       Take deep stock pot heat oil, add cumin seeds and add garlic paste, fry till light brown. Add onions and fry till golden brown.

·       Now add ginger, green chilies and tomatoes/ tomato puree and fry till tomatoes get mashy structure.

·       Now add dry Masalas (turmeric powder, chili powder, dhania powder& salt) and fry again for a moment.

·       Add daal and stir on medium flame. Sprinkle garam masala powder and garnish daal makhni with coriander and add butter.

·       Serve Dal makhni with jeera rice and lachaa paratha.
