When we are talking about Gujarat then no doubt three things come in mind which is fafda (Gathiya), Jalebi, and Undhiyu. Gujarat is popular for sweets and snacks especially in Ahmadabad, Surat, and Vadodara, these cities are very popular for their Specialties like Dhokla, Khakhra, Dabeli, Patra, Khandvi, and Fafda. Let's explore the roots of Fafda with us and don't forget to create crispy and sweet memories like our Jalebi &Fafda.

The Jalebi and Fafda get famous because of its perfect combination and this perfect combination incomplete without Kadhi chutney and unripe shredded papaya sambharyo. According to analysis, some interesting data comes out a tradition to consume fafda and jalebi on Dussehra, and people across the state enjoy them on this day. There is no official data on the consumption but conservative estimates say close to two lakh kg of Fafda and Jalebi worth more than Rs 10 core are consumed in Ahmedabad. On Dashera, which is the tenth day after nine nights of revelries of dance and music known as Navratri in Gujarat, Fafda-jalebi is practically mandatory.












Ingredients

· 250 gm. Chickpeas Flour

· 1 tsp. carom seeds (Ajwain)

· Salt

· 1Tsp.Turmeric

· 1 tsp. Papad Kharo (optional )

· 1 tsp. Baking soda

· 1 tbsp. Oil

· Oil for Deep Frying



METHOD

1. In a mixing bowl, add besan, ajwain, turmeric, 1 tbsp. oil, Baking soda, salt, and mix it well. Add water mixture into the besan mixture, knead it well and make a soft dough.

2. Heat the oil in a pan for deep frying.

3. Take the prepared dough and divide it into small-small balls.

4. Take one ball and place it on a wooden surface. Now with a base of your palm, drag the dough in a straight line, holding the dough at the starting point with the other hand, this form like a long strip.

5. Take a knife and remove the strip from the surface. Use the same process for the remaining balls. Fry both sides of prepared strips till golden color over medium heat or till it becomes crisp.












Served with - Kadhi chutney and raw papaya sambharyo.
