When we are talking about the most famous vegetarian delicacy then no doubt it's veg Kolhapuri Let's discuss the roots of our veg Kolhapuri with the help of a secret spice mix which is Kolhapuri masala.

Tamda rasa, Pandra rasa both are the most famous preparation of Kolhapur. Veg kolhapuri is inspired by one of the dishes from the kolhapuri cuisine – tamda rassa. tamda means 'red' and rassa means 'thin curry or gravy'. tamda rassa is a non-vegetarian dish that makes use of the bold and fiery Kolhapuri masala. Then no doubt veg Kolhapuri is a perfect mixture of spices, vegetables.

Let’s Prepare Quick Kolhapuri Masala At home



INGREDIENTS





· 1 tsp. white sesame seeds

· ½ tsp. poppy seeds

· 2 tbsp. desiccated coconut

· 4 to 5 black pepper

· 1 tsp. coriander seeds

· ½ tsp. cumin seeds

· 1-inch cinnamon

· 2 cloves

· 2 single strands of mace

· 4 to 5 fenugreek seeds

· a pinch grated nutmeg

· 1 small stone flower (optional)

· 1 green cardamom

· 1 black cardamom

· 4 Kashmiri red chilies

· 1 bay leaf

METHOD

· Take all the whole spices in the pan. Turn the heat to medium-low and dry roast with stirring constantly.

· Roast till coconut gets light brown color and you will get the roasted aroma of spices especially coriander seeds. Remove it to a plate and let it cool down.

· Grind it well and keep it into dry container or jar

VEG KOLHAPURI





· 2 cups mixed vegetables Cut into 1 inch long strips. ( ⅓ cup each potato, green peas, green beans, cauliflower, carrot, bell pepper)

· 2 tablespoons Oil

· ¼ inch Ginger chopped

· 3 cloves Garlic chopped

· ½ cup Red onion chopped

· ½ cup Tomato chopped

· ¼ teaspoon Turmeric powder

· Salt to taste

METHOD

· Take a deep stockpot and oil. Add ginger, garlic, and onion. Sprinkle a little salt to speed up the process.

· Cook till onions become soft and light pink. Now add chopped tomatoes.

· Take 2 tbsp. of our freshly grind Kolhapuri masala and add some water and grind it again for our curry of veg Kolhapuri

· Cook till tomatoes are soft and almost mushy add turmeric and our ground masala

· Now add water to make curry consistency and let it simmer for 5-7 minutes on medium-low heat.






· Now add steamed veggies and simmer for 2-3 minutes.

· Garnish with chopped coriander and served with Roti, Chapatti, Naan
